"Killer" caesar salad

Serves 4

Ingredients

Directions

  • 1/2 tin anchovies (approx 8 anchovy fillets)
  • 2 cloves garlic, crushed
Mash with a fork the anchovy fillets and crushed garlic, put in large wooden bowl.
  • 1/2 cup extra virgin olive oil
  • 1 tbsp dijon mustard
  • 1 egg yolks
  • 1 tbsp worchestershire sauce
  • juice of 1/2 lemon
  • freshly gound pepper
  • dash of tabasco

Add oil, mustard, worchestershire, tabasco, pepper, lemon juice, and egg yolk.

Mix well.

  • 1/2 head cos (romaine) lettuce
  • 1 cup grated parmesan cheese
    (Buy the 'real' stuff and grate it. NEVER use the Kraft parmesan in a tin, you might as well use sawdust.)
  • 1 cup croutons

Wash and dry the lettuce, and tear it into pieces

Add lettuce, "real" parmesan, and croutons to dressing.

Toss and serve immediately.
