Chicken with 40 cloves of garlic

Original recipe from a really old newspaper cutting ... not sure of origin
Serves 8

Ingredients

Directions

  • 1 tbsp (15 ml) extra virgin olive oil
  • 2 frying chickens, cut up
Heat oil in large, heavy 13-inch (33-cm) oven-proof frypan. Add chicken pieces in batches, and brown. Drain off excess oil.
  • 40 cloves very fresh garlic (peeled or unpeeled)
  • 10 shallots, chopped fine
  • 3 stalks parsley
  • 1 sprig thyme
  • 1/4 cup (125 ml) dry white wine
  • 1 tsp (5 ml) salt
  • 1/4 tsp (1 ml) pepper

Add garlic, shallots, parsley and thyme to chicken in frypan. Pour wine over chicken. Sprinkle with salt and pepper.

Cover and bake at 325 F (160 C) for 1-1/2 hours or until chicken is cooked and garlic soft.

Remove chicken from frypan and place on serving platter. Place frypan over medium high heat until liquid is reduced by half.

  • 1/4 cup (50 ml) chopped parsley

Pour sauce over chicken and sprinkle with chopped parsley.
