American pumpkin pie

  • 1/2 lb self-raising flour
  • 1 pinch salt
  • 4 oz butter
Make pastry by sifting the flour and salt into a bowl. Rub in the butter. Add sufficient water to make a stiff dough. Roll our dough and line a 25cm pie plate, overlapping the edge by 2cm. Tuck the edge under and crimp the pie edge to increase the height. Chill.
  • 1 cup mashed, cooked pumpkin
  • 4 oz brown sugar
  • 1 pinch salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1 pinch freshly-grated nutmeg
  • 2 eggs (small)
  • 1/4 cup milk
  • 1/2 cup cream

Mix together the salt, sugar and spices. Beat the eggs and stir in the mile, cream and mashed pumpkin. Add the sugar and spices and stir to combine.

Pour into the pie shell. Bake at 190 C for 45 to 50 minutes, until the filling is set.

Cool a little before serving with whipped cream.
